Kikuichi Cutlery
Kikuichi has a long and distinguished history. Although they have been producing superior cutlery for more than a hundred years, the origin of their company lies some seven hundred years ago. For most of their history they manufactured Samurai swords that bore the Emperor's Chrysanthemum symbol as a mark of their excellence. Today, their ancestor's swords are considered national treasures in Japan . Kikuichi uses the same techniques used for making swords in their cutlery manufacturing and the results are amazing. Unlike ordinary stainless steel knives and scissors, the sharpness of their high-quality, handcrafted products is easily maintained. All Kikuichi knives come gift boxed with sharpening and care instructions.

Tsuchime Damascus
Knives
The cutting edge has a beautiful Damascus layer of VG 5 high carbon steel and stainless steel. Made with 16 layers of VG5 high carbon and stainless steel for a beautiful Damascus knife that holds the sharpest cutting edge with easy maintenance.
VG 5 high carbon steel blade has 0.7 - 0.8 % carbon steel for the optimum edge hold and 13-15 % chromium for stain resistance, HRC 59
The surface of the blade has a Tsuchime pattern which is a unique Japanese design used for preventing food from sticking on the blade surface.
The Tsuchime pattern is created first by hand hammering the layered metal, then tampering it with heat.
Each of the Tsuchime knives has a unique hand hammered pattern.
Compressed wood handle with 3 rivets for the optimum balance and durability.

Kikuichi Warikomi Knives
Warikomi Blades are carefully hand crafted with stainless Swedish blade steel. These are possibly the sharpest knives available today. The edges are polished to a keen razor edge, yet have the strength to work through weeks of food preperation with minimal maintenance. Each Warikomi knife features the bladesmiths signature hammered into the blade and comes with a custom fitted ash wood sheath ( locking pin included )

Kikuichi Carbon Steel Knives
These carbon steel knives, are like that of years ago. Sharp, sturdy and very easy to sharpen. Carbon steel knives require a bit more care, will tarnish in color and should be washed and dried by hand after using.

Kikuichi Sushi Knives
These Kikuichi Sushi Knives feature special elite Warikomi blade steel. The edge is tapered to 15 degrees and bevelled evenly for ease of sharpening. These sushi knives accomodate right and left handed chefs. |
